 I don't have a package of powdered au jus mix, but I have beef broth. Could you tell me what else I should add to my beef broth to make au jus?
A.this recipe will make you go weak in your knees! Ingredients 1 cup beef drippings, from a baked roast, do not drain fat 15 ounces beef broth, canned 1/4 cup water, warm 1 tablespoon cornstarch 1/2 teaspoon Mrs. Dash onion and herb seasoning 1/2 teaspoon seasoning salt Directions In a small bowl, combine the water and cornstarch and whisk with a fork until the blend is completely dissolved. Set aside. In a large skillet, over medium heat, pour in the drippings, broth, Mrs. Dash, and seasoned salt and bring to a boil. When it boils, whisk in the cornstarch and water mix and continue whisking until it thickens slightly and then remove from heat. Pour this sauce over any sort of cooked beef or use as a sauce over beef and noodles. NOTE: Sometimes beef drippings can be really salty so add the seasoned salt ONLY after tasting the sauce.

 I have found numerous receipes for scalloped and au gratin potoates. I have followed the instructions step-by-step, with all the correct ingredients and for the correct amount of time, however, when I'm ready to dig in - there is tons of liquid and it makes the potato dishes very water. What am I doing wrong? How can I stop them from ending up water? I needs some serious answers here, please.
A.My mother raised me with a scalloped potato recipe where you layer the potato, dust on the flour, layer again and cover the whole thing with milk. It never turned out right for me. I then found another recipe where you make a rue first (the flour/butter combo) adding the milk to make a "gravy". I then added my shredded cheese to that and stirred in my potatoes after partially cooking them first. It always turned out wonderful. I only use russett potatoes for that. If you are using Yukon, they are too watery. And any recipe book generally doesn't have the temperature correct for those - it always takes longer and will be "gray" if the potatoes are raw in my mother's recipe. Mine stay nice and white.

A.In order to make an au jus you would need to cook the meat and use the juices from it. You probably don't want to cook a prime rib roast just to make au jus for your pastrami sandwich. SLICED STEAK AU JUS 1 1/2 lb. top round steak, trimmed off fat, sliced 1/4 thin 3 oz. can sliced mushrooms, drained 2 cloves garlic, minced 1 tbsp. lemon juice 1 tbsp. Worcestershire sauce Salt and pepper to taste Place steak in non stick baking pan. Put all ingredients evenly over steak. Cover and bake at 350 degrees for 1 hour 15 minutes. Baste at least one time during baking.

A.Au gratin is with cheese and scalloped potatoes are with a basic cream sauce, you could mix them but would probably lose the cheesy goodness. So I would recommend adding more cheese. Everything goes better with cheese!

 I can't afford those expensive Le Creuset ones so I bought a super cheap Lodge dutch oven. Since Coq au vin has wine, which is an acid, will cooking Coq au vin in seasoned cast iron for the prolonged period of time disintegrate my hard earned seasoning? Is it really worth an extra 170 bucks for a pot?
A.Properly seasoned cast iron should hold up for a cooking session. I have cooked up food with some of the hottest peppers, tomatoes, etc and not had trouble during cooking. If you store highly acidic foods you will give the acid time to break down the seasoning. But if that should happen the dutch oven can be reseasoned. I wash and rinse my pots in hot water. Dry them and then put a coat of shortening on them. The shortening will melt and flow into the pores of the metal. Wipe out any excess shortening and heat to 450-500 degrees. This is best done outside in a bbq grill as the grease will smoke quite a bit as it burns. Allow it to sit in the heat for a few minuteas. Check to make sure there is no pooled grease (if so wipe it away as excess grease will prevent your pot from seasoning evenly). Then allow the pot to "cook" until it stops smoking. You are actually carbonizing the shortening and leaving a carbon "nonstick" coating.

A.Firstly you have to speak German well to hold most jobs you will find there for certain so knowing the language is important even if not fluent and just really good will do you well. 90 days of classes will not teach you enough if you are starting from scratch to speak German well enough, if you already speak some and need to get better than it may help or if you are going to be able to keep learning from some one else after than maybe. I found living there the easiest way to learn it. Being emmersed into it will help you a lot. In order for a foreigner to work in Germany UNLESS you own your own company and the rules are different. You have to prove why your skill and labor is necessary over a German there. They have high unemployment in many areas, some worst than others, but you have to prove that your skill is needed. If you do not have a company there willing to vouge for you and hire you then just going and applying for them will not work for you have to have a work visa first before you can apply for work in Germany if you are living in Germany. You must have a job lined up though in order to get that Visa. Do you see the problem here now? So basically unless you have a company willing to hire you ahead of time awaiting for you to get your work permit than you will have little luck finding work or getting the permit. NOW if you operate your own business as i did when I lived there the rules are much different. Now you have to apply for a permit to operate your company there and if any of your income comes from Germany you will have to pay them taxes. If you just live there but say all your clients are in the USA as I did with my WEB Design company, I was only responsible for taxes in the USA for all the clients for from there and paid from there into a USA bank. It is not an easy way to do it and you have to already have a business that is up and running and making you money and will allow you to work from where ever you are in the world as I do with Web Design. I wish you luck, Viel Glueck, no matter what you will have a great time there!! You can always just try and sell yourself off as a TUTOR of ENGLISH to Germans part time during your stay for extra pocket money which I also did once many years ago and it was not a real job I only had three people i tutored and was paid 10 DM an hour at the time and we met three times a week for three hours so i made 270 DM a week give or take back then as pocket money during my four months stay. That is something you could do just be careful for if you make too much then you are a business and not a hobby and will have to have a license and pay taxes. I hope this is of help to you, from one American to another who has both lived and worked there and travel there nearly every year now.
